Choose between three levels of access to Aviary's 2027 season. Reservations are limited.

1. Reserve all major releases: Returning for 2027, a full season reservation includes each major Aviary release for the 2027 season plus early access to all releases before public sale—and a discount on all Aviary coffee, beginning today. We'll collect a 10% deposit today with the balance automatically collected on January 1, 2027.

2. Reserve all major and minor releases: New for 2027, we're offering a reservation level that includes all minor, limited releases as well as all each major release for the 2027 season—plus a discount on all Aviary coffee and early access to all releases before public sale. We'll collect a 10% deposit today with the balance automatically collected on January 1, 2027.

3. Early access only: Become an Aviary Early Access member and get early access to Aviary releases with full-season subscribers days or weeks before they're made available to the public—and get a discount on all Aviary coffee for the entire year.

All access levels include a 10% discount all Aviary coffee that begins today through the end of 2027—as well as early access to our 2026 Freezer Sale in December.

From Christopher: "Since 2025, Aviary has operated using a model where we sell reservations for a full season of coffee, collecting pre-payment upfront. This program gives us the predictability we needed to purchase coffee on a forward basis and helped to finance work at origin as well as pre-payment of coffees ahead of harvest or arrival.

"For 2027, we're once again offering full-season reservations. With this reservation, in addition to securing a box of each major release (free of the chaos and FOMO associated with limited drops), Aviary members will have the first opportunity to purchase additional bags of coffee (pending availability) and our year-round offering at a 10% discount versus the retail price—as well as the first chance to order exclusive, experimental and limited release drops which are too small to make available to the group as a whole and before they're posted for public sale.

"For the first time, we're also offering two new reservation level options: a higher tier, which will include every minor, "wildcard" release; as well as a lower tier which does not include any coffee right away but gives a 10% discount on all Aviary coffee as well as early access to coffees before they're released to the public.

"The idea here is to pool Aviary customers into a purchasing group, enabling us to pre-contract coffees for that group and, in some cases, pre-pay or pre-finance those coffees yet to be produced. This model is inspired by community supported agriculture models in the U.S. and is a way to leverage consumer interest to supersede some of the greatest challenges faced to businesses across the industry—namely, liquidity and access to financing.

"The high cost of the program is related to low roasting volumes and the nature of Aviary's sourcing style, which goes deep into supply chains offering training, feedback and support—with a goal of using the Aviary platform to highlight the work of lesser-known producers and connect them to a broader market. Aviary reservations also subsidize other work which is provided through my platform free of charge, including my blog and content across various channels as well as pro bono work supporting coffee producers and exporters.

"Aviary aims to release one coffee per calendar month in 2027 with somewhere between 5-7 wildcard releases through the year as well as our continually-available offering for milk-based espresso drinks—and will continue to showcase work that we find to be notable and interesting, with an emphasis on clean, bright coffees from smallholders and those otherwise lesser-known producers. As in our 2026 season, we will exclusively be roasting on the Roest P3000.

"For those customers who subscribe, thank you in advance for the trust you place in my sourcing and roasting; I aim to continue to produce the styles of coffee I enjoy drinking and commit to using the revenues from Aviary to engaging with the work of buying coffee in a critical and responsible way."

With a full season reservation, you will automatically receive each release of Aviary's 2027 season—either just the major releases or both major and minor releases, depending which tier you choose.

For a full season reservation, we'll collect a 10% deposit today, with the remainder paid on January 1, 2027.

Membership for Early Access only level will be collected in full today.

A week or two before each release, we'll email you to announce the next coffee and its shipping schedule. At this time, early access will open for those coffees and you have the opportunity to reserve additional bags at a 10% discount off the retail price as well as update your shipping information or instructions.

For U.S. shipping addresses, shipping is included in the cost of the subscription.

For international customers, you will receive an invoice ahead of each shipment which will allow you to update your shipping address and select your shipping method. Aviary will provide a $5 per shipment credit to help with shipment costs, which will automatically be reflected on the shipping selection. Note: unlike in 2026, we will not offer a quarterly fulfillment option.

How much coffee will I receive?

Each release will be a 200g box. We plan to release one coffee per month in 2027 plus as many as six or seven minor, limited-release coffees. Any coffee remaining after subscriber allocations have shipped will first be made available to subscribers on a first-come, first-served basis.

Can I choose which coffees I receive?

No—this is a trust fall. You're entrusting Aviary to buy and roast coffees for you. You will automatically receive each upcoming wide release from Aviary. For limited release coffees (which tend to be experimental), unless you choose the Major + Minor release reservation, you will not receive them automatically but will have the opportunity to buy them at a 10% discount before public release.

Can I skip a coffee if I don't think I'll like it?

You can ask us not to ship it—but unfortunately, we will not be able to refund the value of that coffee. The purpose of this program is to organize our subscribers into a purchasing pool and skipping coffees disrupts that.

How many coffees are included and how often will they be shipped?

We plan to release one coffee per month in 2027, with the first release coming in January. We employ vacuum sealing and freezing to preserve green coffees as they arrive to our roastery to ensure quality and freshness.

When will coffees be roasted?

Regardless of delivery schedule, coffees will be roasted just before shipping.

Can I get two boxes of each release?

Yes, but you'll need to purchase two reservations. To purchase second boxes of individual releases after the season begins, you will receive instructions via email ahead of each release, if additional quantities are expected to be available.

Can I cancel halfway through the year?

Same answer here as with skipping a delivery... you can, but we won't be able to refund your purchase. However, we're happy to share it with another recipient at your request.

How can I get in touch with you for changes to my shipping details?

You can manage your shipping address yourself through the year via your account details on the Aviary website. We will email you ahead of each delivery to remind you. International customers will receive an invoice where they can enter their address and select a shipping method ahead of each shipment.

What kind of coffees can I expect?

Coffees will continue to be roasted in Aviary's style, which is a light roast that prizes vibrant, structured acidity, aromatics and complexity without introducing roasty flavors. We seek out very delicious, high acid coffees with fruit but as little funk as possible. We aren't a fan of boozy or overly process-forward profiles. We will continue to focus heavily on smallholder direct coffees as well as coffees produced by cooperatives but may include a selection of small estates based on our objectives for that coffee or supply chain. While in 2026 we explored the influence of Kenyan and SL genetics, we are exploring different throughlines and curiosities for 2027.

What machine are you roasting on?

In 2026, we switched to the state-of-the-art Roest P3000, giving us unparalleled control over the roasting process, best-in-class batch consistency and allows us to use lower roasting temperatures which better preserve a coffee's sweetness and aromatics.
