From Christopher: "In 2025, Aviary operated with a new model where we sold reservations for a full season of coffee, collecting pre-payment upfront. This gave us the predictability we needed to purchase coffee on a forward basis and helped to finance work at origin as well as pre-payment of coffees ahead of harvest. It was an experiment designed to better understand the nature of the business of coffee production—where cashflow isn't tied to ongoing sales through the year but rather one harvest event, requiring planning, budgeting and cash management.
"For 2026, we're once again offering full-season reservations. With this reservation, in addition to securing a box of each official release (free of the chaos and FOMO associated with limited drops), Aviary members will have the first opportunity to purchase additional bags of coffee (pending availability) at a discount versus the retail price—as well as the first chance to order exclusive, experimental and limited release drops which are too small to make available to the group as a whole and before they're posted for public sale.
"The idea here is to pool Aviary customers into a purchasing group, enabling us to pre-contract coffees for that group and, in some cases, pre-pay or pre-finance those coffees yet to be produced. This model is inspired by community supported agriculture models in the U.S. and is a way to leverage consumer interest to supersede some of the greatest challenges faced to businesses across the industry—namely, liquidity and access to financing.
"The high cost of the program is related to the nature of Aviary's sourcing style, which goes deep into supply chains offering training, feedback and support—with a goal of using the Aviary platform to highlight the work of lesser-known producers and connect them to a broader market. Aviary reservations also subsidize other work which is provided through my platform free of charge, including my blog.
"Aviary aims to release one coffee per calendar month in 2026—and will continue to showcase work that we find to be notable and interesting, with an emphasis on clean, bright coffees from smallholders and those otherwise lesser-known producers. New for 2026 will be our roasting machine—we're migrating to the new, state-of-the-art Roest P3000 to give us greater control over and consistency in the roasting process.

With this reservation, you will automatically receive each monthly release of Aviary's 2026 season. We'll collect a 10% deposit today, with the remainder paid on January 1, 2026.
A week or two before each release, we'll email you to announce the next coffee and its shipping schedule. At this time, you'll have the opportunity to reserve additional bags at a 10% discount off the retail price as well as update your shipping information or instructions.
For U.S. shipping addresses, shipping is included in the cost of the subscription.
For international customers, you have the option to ship each coffee as it's released or ship quarterly (to save on customs and shipping). For either method, you will receive an invoice ahead of each shipment which will allow you to update your shipping address and select your shipping method. Aviary will provide a $5 per shipment credit to help with shipment costs, which will automatically be reflected on the shipping selection.
How much coffee will I receive?
Each release will be a 200g box. We plan to release one coffee per month in 2026 plus one or two limited-release coffees which will first be made available to subscribers on a first-come, first-served basis.
Can I choose which coffees I receive?
No—this is a trust fall. You're entrusting Aviary to buy and roast coffees for you. You will automatically receive each upcoming wide release from Aviary. For limited release coffees (which tend to be experimental), you will not receive them automatically but will have the opportunity to buy them at a 10% discount before public release.
Can I skip a coffee if I don't think I'll like it?
You can ask us not to ship it—but unfortunately, we will not be able to refund the value of that coffee. The purpose of this program is to organize our subscribers into a purchasing pool and skipping coffees disrupts that.
How many coffees are included and how often will they be shipped?
We plan to release one coffee per month in 2026, with the first release coming in January. We'll use vacuum sealing and freezing to preserve green coffees as they arrive to our roastery to ensure quality and freshness. For international orders, you can choose to receive coffees quarterly rather than monthly to reduce shipping and customs charges.
When will coffees be roasted?
Regardless of delivery schedule, coffees will be roasted just before shipping. For international customers who opt to receive 3 releases per shipment, rest assured that the green coffee will be kept vacuum sealed and frozen to ensure freshness and will be roasted the week of shipment.
Can I get two boxes of each release?
Yes, but you'll need to purchase two reservations. To purchase second boxes of individual releases after the season begins, you will receive instructions via email ahead of each release, if additional quantities are expected to be available.
Can I cancel halfway through the year?
Same answer here as with skipping a delivery... you can, but we won't be able to refund your purchase. We're happy to share it with another recipient at your request.
How can I get in touch with you for changes to my shipping details?
For U.S. addresses, we will email you ahead of each delivery, and international customers will receive an invoice where they can enter their address and select a shipping method.
What kind of coffees can I expect?
Coffees will continue to be roasted in Aviary's style, which is a light roast that prizes vibrant, structured acidity, aromatics and complexity without introducing roasty flavors. We seek out very delicious, high acid coffees with fruit but as little funk as possible. We aren't a fan of boozy or overly process-forward profiles. We will continue to focus heavily on smallholder direct coffees as well as coffees produced by cooperatives but may include a selection of small estates based on our objectives for that coffee or supply chain. While in 2025 we explored the genetics of Gesha and Ethiopian lineages, we are exploring different throughlines and curiosities for 2026.
What machine are you roasting on?
While in 2024-2025 we roasted on a Stronghold coffee roaster, for 2026 we have switched to the state-of-the-art Roest P3000, giving us unparalleled control over the roasting process, best-in-class batch consistency and allows us to use lower roasting temperatures which better preserve a coffee's sweetness and aromatics.
